Coconut Berry Pops

Ingredients:


1 cup full-fat canned coconut milk


1–2 tablespoons maple syrup or monk fruit sweetener (optional, adjust to taste)


1 teaspoon vanilla extract


1 cup mixed fresh or frozen berries (blueberries, raspberries, blackberries, strawberries)


Juice of ½ a lemon


Pinch of sea salt


Instructions:


  • Blend Base:

    • In a blender, combine coconut milk, sweetener (if using), vanilla, lemon juice, and sea salt. Blend until smooth.

  • Add Berries

    • Toss in berries and leave them whole if you want them still visible. For a smoother texture, you can blend the berries fully into the base.

  • Pour into Molds

    • Pour the mixture into popsicle molds. Tap lightly to remove air bubbles.

  • Insert Sticks & Freeze

    • Add popsicle sticks and freeze for at least 4–6 hours or until fully solid.

  • Serve & Enjoy

    • Run the molds under warm water to release, and enjoy under the stars or after a sunny hike!
