Marinated Kale Salad

If you did not already know Kale is a super food! It is high in lutein which is important for fighting off damage to our eyes due to sunlight and oxygen. Kale plays a role in maintaining healthy blood cholesterol levels, its anti-inflammatory, and helps support the body during detoxification. This salad is great because it lasts for a few days in the fridge.
1 Bunch Lacinato Kale or your favorite variety
¼ cup Raw Cider Vinegar
2 Tbsp Balsamic Vinegar
Juice of Half a Lemon
2 Tsp Dijon Mustard
1 Garlic Clove minced
Handful of Basil, thinly sliced
Salt and Pepper to Taste
¼ cup Extra Virgin Olive Oil
Top with: Thinly sliced red onion, hemp seeds, pumpkin and/or sunflower seeds
